A Mediterranean spin on Meatballs

The wonderful due @spicebetweenus shared another amazing recipe that is going to be an crowd pleaser, especially for those that call the Northeast home, with all of this cold weather and snow that is in the forecast, we are so happy to share with delicious recipe.

Meatballs in tomato sauce with peas 

For the meatballs -

  • One small onion 
  • One small potato 
  • 1/4 bunch cilantro 

Puree all together. Then add 

  • 1 egg 
  • 1/4 cup panko 
  • 1 tsp garlic powder
  • Salt
  • Pepper
  • 1/2-3/4 lb ground beef

Mix all together and form into balls. Bake on 350 for 25 mins on parchment lined baking sheet. 

In a large skillet, add 1 tsp olive oil and then sauté one diced onion. Then add the following: 

  • One can diced tomatoes 
  • 1 cup water
  • 2 large potatoes, chopped 
  • 1 tsp consommé 
  • 4 cloves garlic, whole
  • 1 cup frozen peas 
  • Salt
  • Pepper 
  • 1 tsp paprika 

Optional - drizzle of date syrup (silan) to balance the flavors. 

Once boiling, add meatballs. Simmer for 25 mins. Enjoy!
