1 lb 2nd cut brisket
1 thinly sliced onion
3 cloves garlic, minced
1/2 cup bbq sauce
1.5 cups chicken stock
Season brisket with salt and pepper on both sides. In a big skillet, add a drop of olive oil and then add brisket when hot. Brown for 2-3 mins on each side. Then remove from pan and place in slow cooker (with a liner). Add onions and garlic to the pan and sauté for 2 mins. Then add bbq sauce and chicken stock. Bring to a boil and then simmer for 10 mins. Pour sauce on top of brisket in slow cooker. Cook on high for 1 hour. Then cook on low for 4.5 hours.
Take brisket out of the slow cooker and pull apart with two forks. Place liquid back in pan on stove and let it simmer for 20 mins until thick. Put shredded brisket back in slow cooker and then pour sauce on top. Keep warm until serving!
